Use the juice of the limes in drinks, or to add sharpness to whipped cream. This recipe makes about 16 cookies.
100 g (4 oz) softened butter
50 g (2 oz) caster sugar
150 g (5 oz) self-raising flour
finely grated rind of 2 limes
1 Pre-heat the oven to 180°C/Fan 160°C/Gas 4. Lightly grease 2 baking trays.
2 Measure the butter and sugar into a bowl and beat together to a creamy consistency. Add the flour and grated lime rind, then bring the mixture together to form a dough. Form the dough into 16 balls the size of a walnut and place on the prepared baking trays. Use a skewer to create a lattice pattern in the top of the biscuits.
3 Bake in the pre-heated oven for 10–15 minutes or until just beginning to turn golden. Lift on to a wire rack and leave to cool.
