

Savoury biscuits are great to go with drinks and these cheesy, nutty ones are delicious. Children like to roll these little balls, and they could give them as a present to a relative. This recipe makes about 30 biscuits.
100 g (4 oz) grated mature Cheddar
100 g (4 oz) plain flour
a little salt
100 g (4 oz) softened butter
¼ teaspoon cayenne pepper
50 g (2 oz) chopped unsalted mixed nuts, plus a few more for sprinkling
1 Pre-heat the oven to 180°C/Fan 160°C/Gas 4. Lightly grease 2 baking trays.
2 Measure all the ingredients, except the nuts for sprinkling, into a bowl and work together with a knife and then your hand to form a dough. Form the dough into 30 balls about the size of a walnut and place well apart on the prepared baking trays.
3 Sprinkle with chopped mixed nuts and then just lightly flatten the balls with your hand. Bake in the pre-heated oven for about 15–20 minutes or until golden brown. Lift on to a wire rack to cool. Serve warm or cold.
TIP Try whole or halved cashew nuts for the topping, instead of the chopped nuts.
